Recipe-Homemade Twinkies


I had my doubts on this one though after my daughter and I made these OH MY GOODNESS...we even took one down to a Store yesterday and today when I went in I had several that tried our Twinkies asked if we were making some for the fair to sell....Well no though  if nothing else fails I can set  me a stand up on my front lawn since there will be a  parade lining up on our street and sell away LOL  Any hoo this is a three step process after the first time you do it, it will go a lot faster.

Well to start off with we need to make our molds for the Twinkies.
Molds:  Get a spice bottle and then take a big square piece of tin foil
Fold it in half
Fold it in half again making a small square
Then roll the spice bottle up in it.
Now make a series of 9 molds....they will look like boats
Then spray the insides with spray oil, set aside. 

Cream Filling
2 teaspoons very hot water
1/4 tsp salt
2 cups marshmallow creme (recipe here)
1/2 cup shortening
1/2 cup powder sugar (recipe here)
1 teaspoon vanilla extract

In small bowl mix salt and water until salt is dissolved and let it cool. Combine the marshmallow cream, shortening, powder sugar, and vanilla in a bowl mix until fluffy. add in salt mixture to mix.  Set aside.
Put the filling in either an icing bag or just take a baggy and cut the corner to use it.  I have my trusting icing pump to do mine :)

Simple Syrup
1 cup granulated sugar
1 cup water

Boil together in a small pot with a lid. Once mixture comes to boil remove lid and cook for 3min until sugar is dissolved. Remove from heat and set it aside.

Lay out a parchment paper on the counter to set the Twinkies on after they come out of the oven and in a shallow pan place the simple syrup in it.


Twinkie Cakes
4 egg whites
1 16oz box of golden pound cake mix
2/3 cup of water

Pre-heat oven to 325 degrees.
Beat the egg whites until stiff but not a solid mass. In separate bowl combine the cake mix with the water and beat until blended. Then fold the egg whites into the cake with a spatula then beat it with the hand mixer at the end until just combined.

 

Fill the molds half full of batter. bake about 22-23min or until lightly golden brown around the edges but light on top and toothpick comes out clean.

After the Twinkies are cooked take out of the mold and roll top and both sides in the Simple syrup mixture. Try to avoid getting the syrup on the bottom of the Twinkies.
Then when the Twinkies are slightly cooled to handle take a skewer and punch three holes in the bottom of the Twinkies. When you punch the hole in make a small cavity inside of the Twinkies ( sorry couldn't hold Twinkies and take picture at same time) Then take your icing gun and stuff it in the hole and fill. Don't fill to much it will bust the cake open just enough to plump it up. Below is how ours turned out.
