Recipe of the Day-Fresh pizza sauce & 4 ingredient pizza Dough

I love making pizza crust and just about every Friday that is what goes on in our house along with movie.  I will give  you my basic recipes for both the crust and sauce though I have to admit it NEVER taste the same.

Fresh Tomato Pizza Sauce
1/3c olive oil
2c finely chopped onions
8c peeled, seeded coursely chopped tomatoes
2 (6oz)cans of tomato paste
2T oregano
2 tsp basil
1 bay leaf
2 T sugar
1 T salt
1/2tsp pepper
2 T finely chopped garlic

  1. If tomatoes are fresh boil hot water and place tomatoes in for 2 to 3 min. The skins will just fall off.
  2. Next you can either put the tomatoes in a blender or have the kids smash them. Then set them aside.
  3. In a large stainless steel pan 6 to 8 quarts heat oil.
  4. Then ad the onions and cook over medium heat 6 to 8 min until transparent.
  5. Add garlic cook another minute.
  6. Stir in tomatoes, paste, oregano, basil, bay leaf, salt , pepper and bring to boil.
  7. Then simmer, uncovered for an hour or until thick. Stir occasionally.
  8. When finished remove bay leaf and then can in a water bath. Makes 5 to 6 pints.
  9. If you can it water bath for 30min.

4 Ingredient Pizza Dough
2 3/4 to 3 1/4 c flour
1 package of yeast
1 c warm water
2 T oil

  1. In small bowl combine yeast and water and set aside.
  2. In a large mixing bowl combine 1 1/4c of flour, salt and oil.
  3. Mix then ad the yeast and water. Knead rest of flour into the bowl until it is elastic and smooth (I normally just knead it the bowl)
  4. Take 1 to 2 T of oil and rub on your dough and cover.
  5.  Let it rise for about 15 to 20min.
  6. Once done roll out and yes I cheat here as well I roll it on to my pans.
