Recipe of the Day-No Bother Apple Cake

This cake is a very delicious, moist and easy cake to throw together quickly.
Especially if you are like me and have little helpers and phone calls that seem to interrupt every time you are trying to cook. I also love the name of it because it definitely is a no bother cake.

No Bother Apple Cake

2/3 c vegetable oil (substitute applesauce)

2 eggs
3 c diced, peeled apple
1 1/2c sugar
1 3/4 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1 T vanilla extract
1 c chopped walnuts or pecans

Preheat oven to 325 degrees
Grease 9 x 13 baking pan
In a large bowl, beat oil and eggs until foamy. Stir in the apple and sugar.
In another bowl, mix together flour, baking soda, salt, cinnamon, stir in the apple mixture into flour mixture. Then stir in the vanilla and nuts. Pour into prepared baking pan.
Bake 45 to 50 min or until top springs back when touched lightly.
