Recipe for the Day-Cabbage Roll Casserole

Cabbage Roll Casserole
  • 4T olive oil
  • 1 medium chopped onion
  • 3, minced garlic cloves
  • 1lb ground beef
  • salt and pepper to taste (I use mrs dash)
  • 1T thyme
  • 2tsp paprika (I use california paprika)
  • 1T worcestershire sauce
  • 2 T brown sugar
  • 1T white vinegar
  • 1 14oz can diced tomatoes with juice (I also use 4 c fresh tomatoes or salsa)
  • 1 15oz can tomato sauce
  • 2c cooked brown rice
  • 1 large head cabbage, coarsely chopped
  • 1/2c grated parmesan
  • 1 c shredded mozzarella

  1. Heat 2T of olive oil in pan over medium heat and saute onion about 3 to 4min, until softened then add garlic and cook for another 2 min
  2.  Increase heat to high add ground beef and season. cook until brown and crumble
  3.  Stir in thyme, paprika, worcestershire sauce, brown sugar, and vinegar cook for another 2min then add tomatoes and sauce. 
  4.  Let this simmer about 15min, then stir in cooked rice and remove from heat. 
  5. In another large deep pan heat 2T of olive oil over medium heat and add chopped cabbage. Cook, stirring almost constantly until the cabbage is about half cooked and salt and pepper. Then remove from heat. 
  6. Heat oven to 350 and grease large casserole dish
  7. Spread about 1/2 cabbage onto bottom, pressing it down a bit with back of spoon. Spoon 1/2 beef mixture over cabbage. Repeat until all is done. 
  8. Cover tightly with foil and bake for 45min, then remove foil and sprinkle cheese on top. Bake uncovered another 10min until cheese melts, then move dish to top of oven-turn on boiler on for a minute or two until cheese is brown.
