Recipe of the Day-Shrimp and Fish Po Boys

My goodness I am not a fish fan unless it is fresh, but this recipe oh my goodness I literally died and did a happy dance. Not only this was awesome, but the flavors exploded in your mouth and sent shock waves of deliciousness. This is not by all accounts my recipe, I saw this on TV and thought I give it a whir. The Show was from 10 dollar dinners..You can find the recipe here on foodnetwork.

Shrimp and Fish PO Boy Sandwich
3c vegetable oil, adjust as needed
1 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp dried thyme
1 tsp salt sprinkle when needed
1/2 tsp freshly ground black pepper
8oz medium shrimp, deveined, peeled
2 5oz tilapia fillets, cut lengthwise then crosswise into 2 in piece
1/4 c whole milk
3/4 c all-purpose flour
1/2c cornmeal

Creamy Garlic Spread
1/3c mayo
1 clove garlic, pressed
zest and juice of 1/2 lemon

1 baguette, cut into quarters
lettuce and slice tomatoes

For the Shrimp and fish. Attach a deep-fry thermometer to the side of a heave wide pot. Fill the pot 2in full with oil. Heat to 350 degrees over medium heat.

Whisk garlic powder, cayenne, thyme, salt and pepper in large bowl. Toss the shrimp and tilapia with the spice mixture and stir to coat. Pour the milk over the fish and shrimp.

Whisk the flour and cornmeal in baking dish. working in batches, toss the shrimp and fish in the flour mixture and then carefully place in pot.  Fry the shrimp and fish, stirring occasionally until golden brown and just cooked through, about 4min each batch.  Transfer the shrimp and fish to paper towels to drain. Sprinkle the shrimp and fish with salt immediately after frying.

For the creamy garlic spread: Blend the mayo, garlic, zest and lemon juice in a bowl.

Cut the baguettes longwise, three-quarter of the way through bread. Spread cut sides with garlic spread. Divide the shrimp and fish among the baguettes and top with lettuce, tomato.
