Corn Dog Mini Muffins:
1/2c all purpose flour
1/2c yellow cornmeal
1/4 tsp baking soda
1/4 tsp salt
1/2 c buttermilk
1/4 c sugar
1/4 c unsalted butter, melted
1 egg
6 franks, cut into 1in pieces
ketchup or mustard for serving
Preheat oven 375 degrees, lightly spray nonstick spray on 24-cup muffin tin, set aside
In a large bowl combine flour, cornmeal, baking soda, salt. In a glass bowl, whisk together buttermilk, sugar, butter, egg.
Pour mixture over dry ingredients and stir until moist.
Scoop 1 T batter into each cup and 1 hot dog piece into the center
Place into oven and bake 8-10min, or until golden brown
Remove from oven and cool on a wire rack
Serve immediately
