Recipe of the Day-Dandelion Jelly

So as I mentioned in a earlier post that I was picking dandelions..well this is what I did with them I made Dandelion Jelly and it must be really good because k has it on just about everything.

Dandelion Jelly
2c of dandelion blossoms
1 quart of water
1pkge (1-3/4oz)powdered fruit pectin
5 1/2c sugar
2T orange extract
4-6 drops of green food coloring (optional)

First pick full blossom dandelions, next cut the blossoms off will look like this after it is done.


Next in large saucepan, bring a dandelion blossoms & water to a boil, boil 4min. Strain blossoms reserve 3c of liquid. Discard blossoms.

In a pan combine dandelion liquid and pectin. Bring to a full roiling boil, stirring constantly. Add sugar: return to a roiling boil. Boil for 1min, stirring constantly.

Remove from heat; add extract and food coloring optional. Skim off foam. ladle hot mixture into sterilized half-pint jars leaving 1/4in headspace. remove air bubbles with rubber spatula.  Process for 5min in a boiling-water canner. yields about 6 half-pints

Make sure these dandelions have not been treated with chemicals.
