K and I love just walking to the store then just browsing, it is one of our favorite things to do...we only take $5 with us. This was one of our trips that we found 2 pkges of markdown butternut squash for $.99 ea. What a deal.
Here is what we made with our squash
Butternut Squash Casserole
3c. mashed, cooked butternut squash, drained
1/2c white sugar
1/4c butter, melted
8oz crushed pineapple with juice
1 tsp ground cinnamon
1 tsp vanilla
1/8tsp ground nutmeg
1/3 c walnut or pecan chopped
Preheat oven to 325 degree...butter 2 qrt casserole dish
In a bowl stir together squash, sugar, butter, pineapple, cinnamon, vanilla, nutmeg.
Mix well, pour casserole dish
Sprinkle with chopped nuts & bake 40-45min
Serves 4-6 side dish
