Recipe-Churro Puffs and Potato Soup

I love trying new recipes or finding them.
This is Churro Puffs
1/3c granulated sugar
1T ground cinnamon
3/4 c + 2T all purpose flour
3T cornstarch
1/4 (slightly heaping) tsp baking soda
1/4 (heaping) fine sea salt
1 egg beaten
1/2 c canola oil
3/4c + 2T club soda

Preheat oven to 475 degrees. Grease 24c mini-muffin pan with spray. In a paper sack or deep dish, combine sugar and cinnamon, and set aside.

In medium bowl, combine flour, cornstarch, baking soda, and salt.
In a small bowl, whisk together egg and oil. Add mixture and the club soda to the flour mixture.
Using the fork, whisk the wet ingredients into the flour mixture, quickly. Don't over mix, a few lumps are fine.
Pour batter equally in pan, cups are almost filled.  Bake 12-15 min until crispy on outside and golden in car. Watch closely. Cool in a pan for a minute...then shake in cinnamon and sugar mix. Serve Warm
