Budget Cooking-Cranberry Pear Baked Oatmeal with roasted maple walnuts

 So K and I love our new aprons and here we go a cooking again. This time we are cooking 


Cranberry-Pear Baked Oatmeal with Maple Sugared Walnuts

For the Baked Oatmeal:
    3 c. Quaker oats (you can use either quick or regular) Walmart-$1 quick quaker oat pouches
    1 c. brown sugar
    1 t. cinnamon
    1 t. baking powder
    1/2 t. salt-
    1 egg
    3/4 c. milk
    2 T. oil
    1 fresh pear, diced
    1/2 c. dried cranberries or 1c of fresh cranberries

  For the Maple Sugared Walnuts:

    1/4 c. butter
    1/2 c. sugar
    1/2 c. chopped walnuts-Dollar Tree carries small bags
    1 T. real maple syrup


 Combine the oats, brown sugar, cinnamon, baking powder and salt in a bowl. Add the egg, milk and oil and stir until combined. Fold in the diced pear and cranberries

Then pour into a greased 9×9 inch casserole dish, flatten slightly. 


 
Meanwhile, melt the butter over low heat in a small skillet. Add the sugar and continue cooking over low heat, stirring frequently, until smooth, about 5 minutes.


Add the walnuts and cook an additional minute. Remove from heat and stir in the maple syrup.
Pour the walnut mixture on top of the oatmeal in the casserole dish and back at 350 degrees for 20-25 minutes, until set and lightly golden brown around the edges. Below is the finish product, well what is left of it ;0
