Food Bank Ingredient Dishes-Choyote Soup


I know a lot of us around here uses the food bank it does help though what happens when you get to much of one ingredient or an item that you have no clue what it is or how to use it. We turn to google though many of us may not have the time to do that. So I am praying that this new series will help all of you out with that issue.
Here is the first recipe of this series....

Chayote Soup

2 cubes chicken bouillon, crumbled
2 cups hot water
1T unsalted butter
1 small yellow onion, minced
3 cloves garlic, minced
1/4 tsp crushed red pepper flakes
2 choyote squashes, peeled and cut into 1/2in
2 T cilantro
salt and pepper to taste

Melt butter in saucepan over medium heat. Cook and stir onion, garlic, and red pepper until soft. Add squash, cilantro, salt and pepper and stir continually for 5min. Stir in bouillon mixture and cover. simmer 20min.  Pour mix in blender and puree until smooth.
