Coconut Flour Chocolate Chip Cookies
1/2 cup coconut flour
1/3 cup Brown Sugar
1T. Baking blend sugar (I use Zing)
1/4 tsp. Baking soda
1/4 teaspoon salt
1 tsp xanthum gum (health store)
3 large eggs (can use egg substitute, make sure to use extra water)
1/3 cup butter, melt, Brown and cool
1 tsp vanilla
1/2 cup of chocolate chip
Preheat 350°F and grease a cookie sheet. In bowl, combine coconut flour, Brown Sugar, baking soda, and salt.
Add in eggs, butter, vanilla and chocolate.
Combine until dough forms.
With hands and roll dough into 9in balls.
Bake for 12-14 minutes, or until bottoms are brown.
