Recipe of the Day-Sweet Couscous Pork Chunks



Sweet Couscous Pork Chunks
1/2 bell pepper chopped
1 small red onion chopped
1/3 c apricot preserve
4 T honey
1 c vegetable broth (chicken broth)
1 c couscous
1/2 lb of pork chunks (can use 3 pork chops)

For Couscous-Boil 1 c of vegetable broth and sprinkle in a little salt, boil. Once boil ad one cup of Couscous, remove from heat and cover, leave alone for 5min. Then remove cover and fluff with fork.

In pan ad 2 T of olive oil heat brown pork chunks ad salt and pepper to taste and then remove. In pan ad 2 T of olive oil and throw in onions, cook until translucent. Throw in peppers and pork chunks sprinkle with salt and pepper to taste.  Cook for 3 to 4 min, then ad in apricot preserve and honey. Stir together and then cook on low for another 5 min.

Plate a spoon of Couscous and then ad the pork chunks mix on top.  Enjoy!
