So my cupcakes got squished and two the topping has disappeared, but they are absolutely divine.
A side note I have had to make a lot of changes in my house the last few weeks since being told I could have an allergic reaction to just about anything. This means that I am not able to have same item everyday from food, meds, personal hygiene, laundry, etc., plus little to no artificial coloring. So on that note I have been researching recipes to fit this new life style. Let me tell you try figure out items with no eggs because even with the substitute egg can only have that one day. So on that note I received this recipe in my e-mail from Hungry Girl.
Banana Cake Split
1 3/4 c yellow cake mix (will give you my recipe later)
1/2tsp baking powder
3/4 c mashed ripe banana (about 2 medium bananas)
1/4c mini semi sweet chocolate chips, divided
1 c cool whip
2T sugar free strawberry jam
6 cherries, halved (I didn't have these on hand)
Directions:
Preheat oven to 375 degrees. Line 12 c muffin pan
Large Bowl, combine cake mix, baking powder, and 1 c water. Mix thoroughly. Add banana and stir well. Gentle fold in 3 T chocolate chips.
Place in muffin pan. Bake in oven until toothpick comes out clean about 20min
All cupcakes to cool completely. In small bowl mix cool whip with preserves and mix well. cover and refrigerate. Once cupcakes are cooled, spread cool whip on and top with 1/4tsp chocolate chip and cherries.
